Apple Almond Bread

Almond Preparation

Toast at 325º for 9-12 minutes:

-           1/2       -           cups     whole almonds

  1. Spread whole almonds out in a single layer on a large baking sheet (lined with parchment).
  2. Place the baking sheet in the oven and roas almonds at 325ºF until lightly browned. Use the following time recommendations, depending on the type of almonds.
    • Whole: 9-12 minutes
    • Chopped: 8-10 minutes
    • Slivered: 6-8 minutes
    • Sliced: 7-9 minutes
  3. Chop coarsely and cool. Grease the bottom of an 8.5 or 9" loaf pan and set aside.

Apple Preparation

Peal and  dice:

1          -                                   large apple

Bread Batter Preparation

In a mixer, blend until crumbly:

2          -           cups                 flour

1          -           cup                  sugar

2          -           teaspoon          cinnamon

1          -           teaspoon          baking powder

-           1/2       teaspoon          salt

-           1/2       cup                  softened butter

In a mixing bowl, beat:

2          -                                   eggs

2          -           tablespoons     yogurt

1          -           teaspoon          vanilla

Instructions

  1. Mix egg batter into flour mixture until just moistened. Add apples and almonds.
  2. Spread batter into loaf pan and bake until done (about 60 minutes).
  3. Cool for 15 minutes and remove from pan.

Theo and Nancy - Our friend Claudia turned us on to this recipe years ago. It is an autumn treat. We like to use Honeycrisp or Haralson apples that have a firmer cooked texture.
